Ingredients

  • 1½ lb ground beef
  • ½ small onion, chopped
  • ½ green bell pepper, chopped
  • 1 cup canned fire-roasted diced tomatoes, drained
  • ½ (8-oz) block cream cheese, softened
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp yellow mustard
  • 1 tsp Worcestershire sauce
  • 12 green leaf lettuce leaves
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cook beef, onion, and bell pepper in a large skillet over medium heat until beef is browned and crumbly.
  2. Stir in tomatoes, cream cheese, chili powder, cumin, mustard, and Worcestershire sauce; bring to a boil, reduce heat, and simmer 10 minutes.
  3. Spoon beef mixture into lettuce leaves; sprinkle with cheese.

  • 1 (5-oz) pkg baby spinach
  • 2 avocados, cubed
  • ½ cup chopped walnuts
  • 6 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Combine spinach, avocados, and nuts in a large bowl. Pour dressing over salad; toss.
