Green Goddess Chicken Thighs
Winter Mixed Greens Salad
Ingredients
- 1½ lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- ¾ cup green goddess dressing
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
- Reduce heat to medium. Stir in dressing; cook 2 minutes or until thoroughly heated, turning to coat chicken.
Side Dish Ingredients
- 1 (10-oz) pkg mixed baby greens
- ½ cup thinly sliced red onion
- ⅓ cup pomegranate seeds (arils)
- ⅔ cup balsamic vinaigrette
- ½ cup crumbled goat cheese
Side Dish Instructions
- Toss together greens, onion, pomegranate seeds, and dressing in a large bowl. Sprinkle with cheese.
