Chicken, Pear, and Brie Quesadillas
Spring Mix with Honey-Lemon Vinaigrette
Ingredients
- 1½ (7-oz) wedges Brie cheese, softened
- 6 soft taco-size low-carb flour tortillas
- 3 pears, thinly sliced
- 1½ cups shredded rotisserie chicken
- 3 Tbsp chopped fresh chives
Instructions
- Spread Brie on tortillas. Layer with pear slices and chicken; sprinkle with chives. Fold tortillas in half.
- Cook tortillas, in batches, in a large skillet coated with cooking spray over medium-high heat 3 minutes per side or until golden brown and cheese melts.
Side Dish Ingredients
- 3 Tbsp olive oil
- 1 Tbsp lemon juice
- 2 tsp honey
- 1 tsp Dijon mustard
- ¼ tsp salt
- 1 clove garlic, minced
- 2 (5-oz) pkg spring mix
Side Dish Instructions
- Whisk together oil, lemon juice, honey, mustard, salt, and garlic in a large bowl. Add spring mix; toss. Sprinkle with pepper, if desired.
