Chicken, Pear, and Brie Quesadillas

Ingredients

  • 1½ (7-oz) wedges Brie cheese, softened
  • 6 soft taco-size low-carb flour tortillas
  • 3 pears, thinly sliced
  • 1½ cups shredded rotisserie chicken
  • 3 Tbsp chopped fresh chives

Instructions

  1. Spread Brie on tortillas. Layer with pear slices and chicken; sprinkle with chives. Fold tortillas in half.
  2. Cook tortillas, in batches, in a large skillet coated with cooking spray over medium-high heat 3 minutes per side or until golden brown and cheese melts.

  • 3 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • 1 clove garlic, minced
  • 2 (5-oz) pkg spring mix

Side Dish Instructions

  1. Whisk together oil, lemon juice, honey, mustard, salt, and garlic in a large bowl. Add spring mix; toss. Sprinkle with pepper, if desired.
