Mac 'n Cheese Tacos
Vegetable Slaw with Cilantro Dressing
Ingredients
- 1½ lb ground beef
- 1 (1-oz) envelope taco seasoning mix
- 1 (8-oz) bottle mild taco sauce, divided
- 1 (15-count) pkg stand 'n stuff taco shells
- 2 (6-oz) boxes classic Cheddar macaroni and cheese
- 1¼ cups shredded Mexican-blend cheese, divided
- ½ cup chopped green onions
Instructions
- Cook beef in a large skillet over medium-high heat until browned and crumbly; drain and return to skillet. Add seasoning mix, ¼ cup water, and ⅓ cup taco sauce. Simmer 2 minutes.
- Meanwhile, heat 12 taco shells according to package directions. Prepare macaroni and cheese according to package directions. Stir in ¾ cup cheese.
- Layer mac 'n cheese and seasoned beef in taco shells. Top tacos with ½ cup cheese, onions, and remaining taco sauce.
- Serve 2 per person. Serve any extra macaroni and cheese on each plate, if desired.
Side Dish Ingredients
- 2 (10-oz) pkg vegetable slaw (or use 2 [10-oz] pkg super blend)
- 1 cup cilantro avocado dressing (or use cilantro lime dressing)
Side Dish Instructions
- Toss together slaw and dressing in a large bowl; chill until ready to serve.
