Ingredients

  • 1 cup halved grape tomatoes
  • 1 tsp olive oil
  • 1 tsp minced garlic
  • 2 Tbsp chopped fresh parsley
  • 1½ Tbsp butter, cut into pieces
  • ⅛ tsp crushed red pepper
  • 2 (6-oz) cod fillets
  • ⅛ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Preheat oven to 400°F. Cook tomatoes in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until tomatoes are tender.
  2. Add garlic; cook 1 minute or until fragrant. Stir in parsley, butter, and red pepper.
  3. Arrange fish in a greased 9-inch baking dish; sprinkle with salt and pepper. Pour tomato mixture over fish.
  4. Bake 12 to 15 minutes or until fish flakes with a fork.

  • 1 cup refrigerated mashed potatoes
  • ½ lemon
  • ⅓ cup crumbled feta cheese

Side Dish Instructions

  1. Heat mashed potatoes according to package directions.
  2. Grate ¾ tsp zest and squeeze 1 Tbsp juice from lemon. Stir lemon zest, lemon juice, and cheese into potatoes.
