Ingredients
- 1 cup halved grape tomatoes
- 1 tsp olive oil
- 1 tsp minced garlic
- 2 Tbsp chopped fresh parsley
- 1½ Tbsp butter, cut into pieces
- ⅛ tsp crushed red pepper
- 2 (6-oz) cod fillets
- ⅛ tsp salt
- ⅛ tsp pepper
Instructions
- Preheat oven to 400°F. Cook tomatoes in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until tomatoes are tender.
- Add garlic; cook 1 minute or until fragrant. Stir in parsley, butter, and red pepper.
- Arrange fish in a greased 9-inch baking dish; sprinkle with salt and pepper. Pour tomato mixture over fish.
- Bake 12 to 15 minutes or until fish flakes with a fork.

- 1 cup refrigerated mashed potatoes
- ½ lemon
- ⅓ cup crumbled feta cheese
Side Dish Instructions
- Heat mashed potatoes according to package directions.
- Grate ¾ tsp zest and squeeze 1 Tbsp juice from lemon. Stir lemon zest, lemon juice, and cheese into potatoes.
