Butter Chicken Meatballs

Ingredients

  • 1 large egg yolk
  • 1 clove garlic, minced
  • 2 tsp smoked paprika (or use regular)
  • ⅛ tsp salt
  • ½ lb ground chicken
  • ½ cup panko breadcrumbs
  • ½ (15-oz) jar butter chicken simmer sauce
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 425°F. Whisk together egg yolk, garlic, paprika, and salt in a medium-size bowl. Add chicken and breadcrumbs; gently mix together using your hands.
  2. Roll chicken mixture into 1½-inch balls. Place on a greased rimmed baking sheet.
  3. Bake 10 minutes or until meatballs are no longer pink in center, shaking pan after 5 minutes.
  4. Meanwhile, heat simmer sauce until warm. Serve over meatballs. Sprinkle with cilantro.
