Ingredients

  • 1½ lb chicken tenderloins
  • 2 Tbsp olive oil
  • ½ tsp salt
  • 1 tsp pepper
  • 2 (12-oz) pkg vegetable stir-fry medley
  • 1 (13.5-oz) bottle sesame sauce
  • ⅓ cup creamy peanut butter
  • ¼ cup soy sauce (or use low sodium)

Instructions

  1. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 4 minutes or until well browned. Sprinkle with salt and pepper.
  2. Meanwhile, cook vegetables according to package directions. Add sesame sauce, peanut butter, and soy sauce to chicken in skillet. Cook 3 to 4 minutes or until thoroughly heated. Stir in vegetables. Serve over rice.
