Ingredients
- 1½ lb chicken tenderloins
- 2 Tbsp olive oil
- ½ tsp salt
- 1 tsp pepper
- 2 (12-oz) pkg vegetable stir-fry medley
- 1 (13.5-oz) bottle sesame sauce
- ⅓ cup creamy peanut butter
- ¼ cup soy sauce (or use low sodium)
Instructions
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat 4 minutes or until well browned. Sprinkle with salt and pepper.
- Meanwhile, cook vegetables according to package directions. Add sesame sauce, peanut butter, and soy sauce to chicken in skillet. Cook 3 to 4 minutes or until thoroughly heated. Stir in vegetables. Serve over rice.
