Ingredients

  • ½ lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 tsp olive oil
  • ¼ cup plain whole-milk yogurt
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lemon juice
  • 1½ tsp minced garlic

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
  2. Meanwhile, stir together yogurt, cilantro, lemon juice, and garlic. Serve sauce with chicken.

  • 1 (3.5-oz) pouch boil-in-bag brown rice
  • 1 (12-oz) pkg green beans
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp butter
  • ¼ tsp ground turmeric
  • Dash of crushed red pepper
  • 3 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Cook rice and green beans separately according to package directions. Toss green beans with salt and pepper.
  2. Melt butter with turmeric and red pepper in a skillet over medium-high heat. Add rice; cook 5 minutes or until lightly browned and well coated. Stir in cilantro.
