Bow-Tie Bolognese

Ingredients

  • ½ lb plant-based ground beef
  • 2 tsp minced garlic
  • 1½ tsp olive oil
  • ½ (14.5-oz) can diced tomatoes with Italian seasonings
  • ½ (8-oz) can no-salt-added tomato sauce
  • 1½ tsp Italian seasoning
  • ¼ tsp crushed red pepper
  • 1 cup hot water
  • 4 oz bow-tie pasta
  • ½ cup shredded part-skim mozzarella cheese
  • ¼ cup freshly shredded Parmesan cheese
  • Fresh parsley sprigs (optional)

Instructions

  1. Cook plant-based beef and garlic in hot oil in a sauté pan or Dutch oven over medium heat until browned and crumbly.
  2. Stir in diced tomatoes, sauce, seasoning, and red pepper.
  3. Add water and pasta. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until pasta is done. Sprinkle with cheeses. Sprinkle with parsley, if desired.
