Bow-Tie Bolognese

Ingredients
- ½ lb plant-based ground beef
- 2 tsp minced garlic
- 1½ tsp olive oil
- ½ (14.5-oz) can diced tomatoes with Italian seasonings
- ½ (8-oz) can no-salt-added tomato sauce
- 1½ tsp Italian seasoning
- ¼ tsp crushed red pepper
- 1 cup hot water
- 4 oz bow-tie pasta
- ½ cup shredded part-skim mozzarella cheese
- ¼ cup freshly shredded Parmesan cheese
- Fresh parsley sprigs (optional)
Instructions
- Cook plant-based beef and garlic in hot oil in a sauté pan or Dutch oven over medium heat until browned and crumbly.
- Stir in diced tomatoes, sauce, seasoning, and red pepper.
- Add water and pasta. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until pasta is done. Sprinkle with cheeses. Sprinkle with parsley, if desired.
