Roasted Cauliflower Gyros

Ingredients
- 1 (12-oz) pkg cauliflower florets (see Note)
- 3 Tbsp olive oil vinaigrette
- ½ tsp ground cumin
- ½ cup hummus
- 3 whole wheat pita bread rounds, heated
- 1 cup shredded red cabbage
- 2 Tbsp chopped fresh parsley
- ½ English cucumber, sliced
- ½ cup crumbled feta cheese
- Toasted pine nuts (optional)
Instructions
- Preheat oven to 450°F. Toss together cauliflower, vinaigrette, and cumin on a foil-lined rimmed baking sheet; spread in a single layer. Bake 20 to 25 minutes or until browned and tender.
- Spread hummus on each pita; top with cauliflower, cabbage, parsley, cucumber, and cheese. Sprinkle with nuts, if desired.
Side Dish Ingredients
- 1 large Roma tomato, coarsely chopped
- ½ English cucumber, sliced
- 2 tsp olive oil
- 2 tsp balsamic vinegar
Side Dish Instructions
- Toss together all ingredients in a medium bowl. Sprinkle with salt and pepper to taste, if desired.
