Roasted Cauliflower Gyros

Ingredients

  • 1 (12-oz) pkg cauliflower florets (see Note)
  • 3 Tbsp olive oil vinaigrette
  • ½ tsp ground cumin
  • ½ cup hummus
  • 3 whole wheat pita bread rounds, heated
  • 1 cup shredded red cabbage
  • 2 Tbsp chopped fresh parsley
  • ½ English cucumber, sliced
  • ½ cup crumbled feta cheese
  • Toasted pine nuts (optional)

Instructions

  1. Preheat oven to 450°F. Toss together cauliflower, vinaigrette, and cumin on a foil-lined rimmed baking sheet; spread in a single layer. Bake 20 to 25 minutes or until browned and tender.
  2. Spread hummus on each pita; top with cauliflower, cabbage, parsley, cucumber, and cheese. Sprinkle with nuts, if desired.

Side Dish Ingredients

  • 1 large Roma tomato, coarsely chopped
  • ½ English cucumber, sliced
  • 2 tsp olive oil
  • 2 tsp balsamic vinegar

Side Dish Instructions

  1. Toss together all ingredients in a medium bowl. Sprinkle with salt and pepper to taste, if desired.
