Ingredients

  • 1 (9-oz) pkg refrigerated angel hair pasta
  • 1 Tbsp butter
  • ½ (32-oz) pkg diced boneless, skinless chicken breasts
  • ¾ cup heavy cream
  • ½ jar pesto
  • ½ cup shredded Parmesan cheese
  • ¼ cup chopped flat-leaf parsley

Instructions

  1. Cook pasta with oil according to package directions.
  2. Meanwhile, melt butter in a large skillet over medium-high heat. Add chicken, and season with salt and pepper, if desired. Cook 8 to 10 minutes or until browned. Stir in cream and pesto; bring to a boil, reduce heat, and simmer 5 minutes or until thickened.
  3. Toss with pasta in a large bowl. Season with additional salt and pepper, if desired. Sprinkle with cheese and parsley.

Side Dish Ingredients

  • ½ (10-oz) pkg baby spinach
  • ½ cup drained mandarin oranges in juice 
  • ¼ cup dried cranberries
  • ¼ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together spinach, oranges, cranberries, and vinaigrette in a large bowl.
