One-Pot Cheesy Jambalaya
Ingredients
- 1½ lb andouille sausage, halved and sliced
- 1 lb peeled and deveined, large raw shrimp
- ¼ cup olive oil
- 1 red bell pepper, chopped
- 1 stalk celery, chopped
- 2 (12-oz) pkg frozen riced cauliflower
- 1 Tbsp Cajun seasoning
- ½ cup water
- ⅓ cup heavy cream
- ¾ cup shredded Cheddar cheese
Instructions
- Cook sausage and shrimp in hot oil in a large Dutch oven over medium-high heat 5 to 7 minutes or until sausage is browned and shrimp turns pink. Remove sausage and shrimp from skillet; keep warm.
- Add bell pepper, celery, cauliflower, and seasoning to same skillet; cook over medium heat 5 minutes or until vegetables are tender.
- Stir in water and cream. Simmer over medium-low heat 5 minutes or until slightly thickened; stir in sausage, shrimp, and cheese.
