Ingredients

  • 6 tandoori flatbreads (or use other flatbread or naan)
  • ¾ cup pesto
  • 3 Roma tomatoes, sliced
  • 1 (8-oz) ball fresh mozzarella cheese, sliced and patted dry
  • 3 Tbsp balsamic glaze
  • Crushed red pepper (optional)

Instructions

  1. Preheat broiler. Arrange flatbreads on a large baking sheet; spread pesto on flatbreads.
  2. Top with tomatoes and cheese. Broil 2 to 3 minutes or until cheese melts. Drizzle with glaze, and, if desired, sprinkle with red pepper.

  • 1 (10-oz) pkg spinach
  • ½ cup dried cherries (or use dried cranberries)
  • ½ cup chopped walnuts
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
