Caprese Pesto Flatbreads
Cherry-Walnut Spinach Salad

Ingredients
- 6 tandoori flatbreads (or use other flatbread or naan)
- ¾ cup pesto
- 3 Roma tomatoes, sliced
- 1 (8-oz) ball fresh mozzarella cheese, sliced and patted dry
- 3 Tbsp balsamic glaze
- Crushed red pepper (optional)
Instructions
- Preheat broiler. Arrange flatbreads on a large baking sheet; spread pesto on flatbreads.
- Top with tomatoes and cheese. Broil 2 to 3 minutes or until cheese melts. Drizzle with glaze, and, if desired, sprinkle with red pepper.

- 1 (10-oz) pkg spinach
- ½ cup dried cherries (or use dried cranberries)
- ½ cup chopped walnuts
- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
