Warm Brussels Sprouts-Grains Salad
Sweet Potato Waffle FriesIngredients
- 3 (8.8-oz) pouches microwavable seven whole-grains mix
- 1 small sweet onion, sliced
- 2 (12-oz) pkg shaved Brussels sprouts (or use chopped kale)
- 2 Tbsp olive oil
- 2 red apples, cored and sliced
- 1 Tbsp lemon juice
- 1 cup crumbled feta cheese
- ½ cup chopped pecans
Instructions
- Cook grains according to package directions.
- Meanwhile, cook onion and Brussels sprouts in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Add apples and lemon juice; cook 3 minutes or until crisp-tender.
- Add grains to skillet; cook 1 minute or until thoroughly heated. Sprinkle with cheese and nuts.
