Warm Brussels Sprouts-Grains Salad

Sweet Potato Waffle Fries

Ingredients

  • 3 (8.8-oz) pouches microwavable seven whole-grains mix
  • 1 small sweet onion, sliced
  • 2 (12-oz) pkg shaved Brussels sprouts (or use chopped kale)
  • 2 Tbsp olive oil
  • 2 red apples, cored and sliced
  • 1 Tbsp lemon juice
  • 1 cup crumbled feta cheese
  • ½ cup chopped pecans

Instructions

  1. Cook grains according to package directions.
  2. Meanwhile, cook onion and Brussels sprouts in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Add apples and lemon juice; cook 3 minutes or until crisp-tender.
  3. Add grains to skillet; cook 1 minute or until thoroughly heated. Sprinkle with cheese and nuts.
