Loaded Hash Browns

Ingredients
- 1 Tbsp flaxseed meal
- 2½ Tbsp water
- 1 (20-oz) pkg refrigerated hash browns, thawed
- ½ cup vegan shredded Cheddar cheese
- 3 green onions, sliced
- 2 Tbsp nutritional yeast
- 2 Tbsp olive oil
- ½ tsp garlic salt
- 2 (14.7-oz) cans vegetarian chili
- 2 tomatoes, diced
- 1 (8-oz) pkg shredded lettuce
- ½ cup vegan sour cream
Instructions
- Preheat oven to 400°F. Stir together flaxseed meal and water. Let stand 5 minutes to thicken.
- Place hash browns between layers of paper towels; roll up, and squeeze liquid from potatoes.
- Combine hash browns, flaxseed meal mixture, cheese, onions, nutritional yeast, oil, and garlic salt in a large bowl.
- Spread hash browns mixture in an even layer on a large rimmed baking sheet coated with cooking spray. Spray hash browns mixture with cooking spray. Bake 25 to 30 minutes or until crispy.
- Meanwhile, heat chili according to directions on can.
- Serve hash browns topped with chili, lettuce, tomatoes, and sour cream.
