Loaded Hash Browns

Ingredients

  • 1 Tbsp flaxseed meal
  • 2½ Tbsp water
  • 1 (20-oz) pkg refrigerated hash browns, thawed
  • ½ cup vegan shredded Cheddar cheese
  • 3 green onions, sliced
  • 2 Tbsp nutritional yeast
  • 2 Tbsp olive oil
  • ½ tsp garlic salt
  • 2 (14.7-oz) cans vegetarian chili
  • 2 tomatoes, diced
  • 1 (8-oz) pkg shredded lettuce
  • ½ cup vegan sour cream

Instructions

  1. Preheat oven to 400°F. Stir together flaxseed meal and water. Let stand 5 minutes to thicken.
  2. Place hash browns between layers of paper towels; roll up, and squeeze liquid from potatoes.
  3. Combine hash browns, flaxseed meal mixture, cheese, onions, nutritional yeast, oil, and garlic salt in a large bowl.
  4. Spread hash browns mixture in an even layer on a large rimmed baking sheet coated with cooking spray. Spray hash browns mixture with cooking spray. Bake 25 to 30 minutes or until crispy.
  5. Meanwhile, heat chili according to directions on can.
  6. Serve hash browns topped with chili, lettuce, tomatoes, and sour cream.
