Mac and Cheese Tomato Soup

Ingredients

  •  2 (7.25-oz) boxes macaroni and cheese dinner
  • ¼ cup butter
  • 1 cup milk
  • 1 (28-oz) can crushed tomatoes with basil, garlic, and oregano
  • 2 cups low-sodium chicken broth

Instructions

  1. Prepare macaroni and cheese in a large saucepan according to package directions using ¼ cup butter and 1 cup milk. Add tomatoes and broth; cook 5 minutes or until thoroughly heated.

Side Dish Ingredients

  • 6 Tbsp butter, softened
  • 12 slices whole-grain bread
  • 6 slices Cheddar cheese

Side Dish Instructions

  1. Preheat oven to 450°F. Spread butter on 1 side of each bread slice. Place 6 slices of bread, buttered side down, on a baking sheet.
  2. Top each with 1 slice cheese and remaining bread slices, buttered side up, to make sandwiches.
  3. Bake 6 to 8 minutes per side or until bread is toasted and cheese is melted.
