Scrambled Eggs Benedict

Ingredients

  • 1 (0.9-oz) envelope hollandaise sauce mix 
  • 1¼ cups milk, divided
  • 6 Tbsp butter, divided
  • 12 slices Canadian bacon
  • 12 large eggs
  • 6 English muffins, split and toasted

Instructions

  1. Prepare hollandaise sauce according to package directions using 1 cup milk and 4 Tbsp butter; keep warm.
  2. Meanwhile, melt 2 Tbsp butter in a large nonstick skillet over medium heat; add Canadian bacon, in batches, and cook 2 to 3 minutes per side or until beginning to brown. Drain on paper towels and keep warm.
  3. Whisk together eggs and ¼ cup milk in a bowl. Add to drippings in skillet, and cook, without stirring, until eggs begin to set on bottom.
  4. Cook, stirring constantly, until eggs are thickened and set. Season with salt and pepper, if desired.
  5. Top each muffin half with 1 slice Canadian bacon, scrambled eggs, and hollandaise sauce. Serve immediately.

Side Dish Ingredients

  • 1 cantaloupe, seeded and sliced
  • ½ lb seedless red grapes

Side Dish Instructions

  1. Serve melon and grapes on the side.
