Scrambled Eggs Benedict

Ingredients
- 1 (0.9-oz) envelope hollandaise sauce mix
- 1¼ cups milk, divided
- 6 Tbsp butter, divided
- 12 slices Canadian bacon
- 12 large eggs
- 6 English muffins, split and toasted
Instructions
- Prepare hollandaise sauce according to package directions using 1 cup milk and 4 Tbsp butter; keep warm.
- Meanwhile, melt 2 Tbsp butter in a large nonstick skillet over medium heat; add Canadian bacon, in batches, and cook 2 to 3 minutes per side or until beginning to brown. Drain on paper towels and keep warm.
- Whisk together eggs and ¼ cup milk in a bowl. Add to drippings in skillet, and cook, without stirring, until eggs begin to set on bottom.
- Cook, stirring constantly, until eggs are thickened and set. Season with salt and pepper, if desired.
- Top each muffin half with 1 slice Canadian bacon, scrambled eggs, and hollandaise sauce. Serve immediately.

- 1 cantaloupe, seeded and sliced
- ½ lb seedless red grapes
Side Dish Instructions
- Serve melon and grapes on the side.
