Marinara Meatball Skewers
Italian Pasta-Veggie SaladIngredients
- 1 lb 93% ground beef
- 2 cloves garlic, minced
- 1 Tbsp Italian seasoning
- 1 large egg, lightly beaten
- ¼ tsp salt
- ½ tsp pepper
- 1 Tbsp olive oil
- ½ cup low-sodium marinara sauce, heated
Instructions
- Combine beef, garlic, Italian seasoning, egg, salt, and pepper; shape into 1-inch balls.
- Cook meatballs in hot oil in a large skillet over medium heat 4 minutes or until browned and centers are no longer pink, stirring often.
- Thread meatballs onto wooden picks or wooden skewers. Serve with marinara sauce for dipping.
Side Dish Ingredients
- 4 oz whole-grain rotini
- 1 cup grape tomatoes, halved
- ½ cucumber, sliced
- ¼ cup refrigerated Italian vinaigrette
Side Dish Instructions
- Cook pasta according to package directions; rinse with cold water to cool.
- Combine pasta, tomatoes, cucumber, and dressing in a large bowl. Chill until ready to serve.
