Marinara Meatball Skewers

Ingredients

  • 1 lb 93% ground beef
  • 2 cloves garlic, minced
  • 1 Tbsp Italian seasoning
  • 1 large egg, lightly beaten
  • ¼ tsp salt
  • ½ tsp pepper
  • 1 Tbsp olive oil
  • ½ cup low-sodium marinara sauce, heated

Instructions

  1. Combine beef, garlic, Italian seasoning, egg, salt, and pepper; shape  into 1-inch balls.
  2. Cook meatballs in hot oil in a large skillet over medium heat 4 minutes or until browned and centers are no longer pink, stirring often.
  3. Thread meatballs onto wooden picks or wooden skewers. Serve with marinara sauce for dipping.

Side Dish Ingredients

  • 4 oz whole-grain rotini
  • 1 cup grape tomatoes, halved
  • ½ cucumber, sliced
  • ¼ cup refrigerated Italian vinaigrette

Side Dish Instructions

  1. Cook pasta according to package directions; rinse with cold water to cool.
  2. Combine pasta, tomatoes, cucumber, and dressing in a large bowl. Chill until ready to serve.
