Nashville Hot Chicken Meatballs
Mashed Potatoes and Pickle Slaw

Ingredients
- 1½ lb ground chicken
- 1 cup panko breadcrumbs
- ½ cup chopped walnuts
- 2 large eggs, lightly beaten
- 2 Tbsp plus ½ tsp smoked paprika, divided
- ¼ tsp salt
- 6 Tbsp butter
- 3 Tbsp honey
- 1½ tsp cayenne pepper (see Note)
Instructions
- Preheat oven to 425°F. Gently mix together chicken, breadcrumbs, nuts, eggs, 2 Tbsp paprika, and salt in a large bowl using your hands.
- Roll chicken mixture into 1½-inch balls. Place on two large greased rimmed baking sheets. Bake 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes.
- Meanwhile, cook butter, honey, cayenne, and ½ tsp paprika in a small saucepan over medium-low heat until better melts. Drizzle sauce over meatballs before serving.

- 1 (24-oz) pkg refrigerated mashed potatoes
- 6 Tbsp mayonnaise
- 2 Tbsp dill pickle juice
- 1 tsp sugar
- ½ tsp garlic powder
- ½ tsp pepper
- ¼ tsp dried dill (optional)
- 1 (16-oz) pkg tricolor coleslaw
- ¾ cup sliced or chopped dill pickles
Side Dish Instructions
- Heat potatoes according to package directions.
- Meanwhile, combine mayonnaise, pickle juice, sugar, garlic powder, pepper, and, if desired, dried dill in a large bowl. Add coleslaw and pickles; toss.
