Ingredients

  • 1½ lb ground chicken
  • 1 cup panko breadcrumbs
  • ½ cup chopped walnuts
  • 2 large eggs, lightly beaten
  • 2 Tbsp plus ½ tsp smoked paprika, divided
  • ¼ tsp salt
  • 6 Tbsp butter
  • 3 Tbsp honey
  • 1½ tsp cayenne pepper (see Note)

Instructions

  1. Preheat oven to 425°F. Gently mix together chicken, breadcrumbs, nuts, eggs, 2 Tbsp paprika, and salt in a large bowl using your hands.
  2. Roll chicken mixture into 1½-inch balls. Place on two large greased rimmed baking sheets. Bake 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes.
  3. Meanwhile, cook butter, honey, cayenne, and ½ tsp paprika in a small saucepan over medium-low heat until better melts. Drizzle sauce over meatballs before serving.

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 6 Tbsp mayonnaise
  • 2 Tbsp dill pickle juice
  • 1 tsp sugar
  • ½ tsp garlic powder
  • ½ tsp pepper
  • ¼ tsp dried dill (optional)
  • 1 (16-oz) pkg tricolor coleslaw
  • ¾ cup sliced or chopped dill pickles

Side Dish Instructions

  1. Heat potatoes according to package directions.
  2. Meanwhile, combine mayonnaise, pickle juice, sugar, garlic powder, pepper, and, if desired, dried dill in a large bowl. Add coleslaw and pickles; toss.
