Ingredients

  • ¼ cup almond flour
  • 6 Tbsp freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ cup creamy Caesar dressing
  • 1½ lb boneless pork loin chops

Instructions

  1. Preheat oven to 375°F. Combine almond flour, cheese, and Italian seasoning in a shallow bowl. Pour dressing into another shallow bowl.
  2. Coat pork chops with flour mixture, pressing gently to adhere; dip chops in dressing, coating both sides. Place chops in a lightly greased baking dish.
  3. Bake, uncovered, 25 to 35 minutes or until done.

  • 1½ lb zucchini, chopped
  • ⅔ cup heavy cream (or use half-and-half)
  • 2 large eggs
  • 1 tsp kosher salt
  • ½ tsp pepper
  • ⅔ cup freshly grated Parmesan cheese, divided
  • ⅓ cup almond flour
  • 2 Tbsp chopped fresh sage
  • 2 Tbsp butter, melted

Side Dish Instructions

  1. Preheat oven to 450°F. Arrange zucchini in an even layer in a lightly greased 11- x 7-inch baking dish.
  2. Whisk together cream, eggs, salt, and pepper. Pour over zucchini, and sprinkle with ⅓ cup cheese. Bake 20 minutes.
  3. Toss together almond flour, sage, butter, and ⅓ cup cheese; sprinkle over zucchini. Bake until topping is browned and center is set.
