Garlicky Shrimp Marinara with Pasta and Feta

Ingredients

  • 12 oz whole-grain spaghetti
  • 1 (24-oz) pkg frozen unpeeled, large raw shrimp, thawed
  • 5 cloves garlic, minced
  • 3 Tbsp olive oil
  • 1 (24-oz) jar marinara sauce
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh parsley

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, peel and devein shrimp. Cook shrimp and garlic in hot oil in a large skillet over medium heat 2 minutes per side or until shrimp are just pink. Remove shrimp from skillet using a slotted spoon.
  3. Add marinara sauce to skillet; bring to a boil. Reduce heat; simmer 8 minutes.
  4. Return shrimp to skillet; cook 2 minutes or until thoroughly heated.
  5. Divide pasta among 6 plates; top with shrimp mixture, and sprinkle with cheese and parsley.
