Spinach-Artichoke French Bread Pizza
Spring Mix and Tomato Salad
Ingredients
- ½ (14-oz) can artichoke hearts, chopped
- 1 Tbsp olive oil
- ½ cup frozen chopped spinach, thawed and squeezed dry
- 3 oz cream cheese
- ¼ cup sour cream
- ½ cup grated Parmesan cheese
- ½ tsp garlic powder
- ½ (14-oz) loaf French bread, halved
Instructions
- Preheat broiler. Cook artichokes in hot oil in a large skillet over medium-high heat 2 minutes. Add spinach; cook 2 minutes. Stir in cream cheese, sour cream, Parmesan, and garlic powder; cook until cream cheese melts and mixture is blended.
- Spread mixture on cut sides of French bread on a baking sheet. Broil 2 to 3 minutes or until browned.

- 3 cups spring mix
- ½ cup halved grape tomatoes
- 3 Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a bowl.
