Spinach-Artichoke French Bread Pizza

Ingredients

  • ½ (14-oz) can artichoke hearts, chopped
  • 1 Tbsp olive oil
  • ½ cup frozen chopped spinach, thawed and squeezed dry
  • 3 oz cream cheese
  • ¼ cup sour cream
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ (14-oz) loaf French bread, halved

Instructions

  1. Preheat broiler. Cook artichokes in hot oil in a large skillet over medium-high heat 2 minutes. Add spinach; cook 2 minutes. Stir in cream cheese, sour cream, Parmesan, and garlic powder; cook until cream cheese melts and mixture is blended.
  2. Spread mixture on cut sides of French bread on a baking sheet. Broil 2 to 3 minutes or until browned.

  • 3 cups spring mix
  • ½ cup halved grape tomatoes
  • 3 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
