Brown Sugar-Glazed Salmon

Brown Butter Green Beans and Mashed Potatoes

Ingredients

  • 6 (6-oz) salmon fillets
  • 4 Tbsp brown sugar
  • 1½ Tbsp Dijon mustard
  • 1½ Tbsp soy sauce
  • 1½ tsp rice vinegar

Instructions

  1. Preheat oven to 425°F. Place fish on a foil-lined rimmed baking sheet; bake 10 minutes. Remove from oven and increase oven temperature to broil.
  2. Meanwhile, stir together brown sugar, mustard, soy sauce, and vinegar in a small saucepan. Bring to a boil over medium-high heat, stirring until blended. Brush glaze over fish.
  3. Broil 5 minutes or until fish flakes with a fork and glaze is caramelized.

  • 2 (8-oz) pkg thin green beans
  • 4 Tbsp butter
  • 2 tsp balsamic vinegar
  • ¼ tsp salt
  • 1 (32-oz) pkg refrigerated mashed potatoes

Side Dish Instructions

  1. Steam green beans according to package directions.
  2. Meanwhile, melt butter in a large skillet over medium heat until butter begins to brown and smells nutty. Add vinegar, salt, and steamed green beans; toss.
  3. Heat potatoes according to package directions.
