Chicken with Mandarin Orange Sauce
Rice and Broccoli with Water ChestnutsIngredients
- 6 (6-oz) boneless, skinless chicken breasts
- 2 Tbsp butter
- 1 cup orange marmalade
- 2 Tbsp cornstarch
- 2 Tbsp lemon juice
- ½ tsp ground ginger
- 1 (15-oz) can mandarin oranges
Instructions
- Pound chicken to an even thickness in a zip-top bag using the heel of your hand or a meat mallet. Season chicken with salt and pepper, if desired.
- Melt butter in a large nonstick skillet over medium heat; add chicken, and cook, 3 to 4 minutes per side or until done. Remove from skillet, and keep warm.
- Meanwhile, stir together marmalade, cornstarch, lemon juice, and ginger. Add to skillet, along with oranges and juice from can. Cook, stirring occasionally, until sauce is thickened.
- Return chicken to skillet, and cook 1 minute or until thoroughly heated.
Side Dish Ingredients
- 2 cups long-grain white rice
- 2 (12-oz) pkg broccoli florets
- 1 (8-oz) can water chestnuts, drained
- 3 Tbsp soy sauce
Side Dish Instructions
- Steam rice according to package directions.
- Steam broccoli according to package directions; place in a large bowl. Add water chestnuts and soy sauce; toss.
