Turkey Sausage-and-Cheddar Cheese Breakfast Burritos

Ingredients

  • ½ lb lean ground turkey sausage
  • 2 large eggs
  • 2 large egg whites
  • 4 (0.67-oz) slices reduced-fat Cheddar cheese
  • 4 soft taco-size whole wheat tortillas
  • ½ cup refrigerated salsa
  • 2 Tbsp chopped green onion

Instructions

  1. Cook sausage in a large nonstick skillet over medium heat 6 minutes or until browned and crumbled. Drain on paper towels, reserving drippings in pan.
  2. Whisk together eggs and egg whites. Cook eggs in hot drippings over medium heat, without stirring, 2 minutes or until beginning to set. Cook, stirring constantly, 2 minutes or until thickened and set.
  3. Place 1 slice cheese in center of each tortilla. Top with sausage, eggs, salsa, and green onion. Roll up tortillas burrito-style.
