Tzatziki-Chickpea Farro Bowls

Ingredients

  • 1½ cups pearled farro
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • 2 Tbsp olive oil
  • 1 (12-oz) jar sliced roasted red peppers, drained
  • 1½ tsp Italian seasoning
  • ¾ cup chopped pitted kalamata olives
  • 1½ cups tzatziki dip
  • ½ cup chopped fresh parsley (optional)

Instructions

  1. Cook farro according to package directions.
  2. Meanwhile, cook chickpeas in hot oil in a large skillet over medium-high heat 10 to 12 minutes or until lightly browned. Stir in peppers and Italian seasoning; cook until thoroughly heated.
  3. Divide farro among 6 bowls. Top with chickpea mixture, olives, tzatziki dip, and, if desired, parsley.

Side Dish Ingredients

  • 6 cups spinach
  • 1 pint grape tomatoes, halved
  • ½ cup sliced almonds
  • ½ cup lemon vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
