Ingredients

  • 12 oz bow-tie pasta
  • ¼ cup butter
  • 1 Tbsp minced garlic
  • 1 zucchini, sliced
  • ½ lb asparagus, cut into bite-size pieces
  • 1 red bell pepper, chopped
  • ¾ cup chicken broth
  • 1 cup fresh or frozen green peas
  • 1 (15-oz) jar Alfredo sauce
  • 2 cups shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, melt butter in a large nonstick skillet over medium heat; add garlic. Cook just until fragrant. Add zucchini, asparagus, bell pepper, and broth; bring to a simmer.
  3. Cook vegetables 3 to 4 minutes or until crisp-tender. Add peas and Alfredo sauce; simmer 3 minutes. Stir in half of cheese. Toss with pasta in pasta pot.
  4. Sprinkle with remaining cheese. Season with salt and pepper, if desired.
