Ingredients
- 12 oz bow-tie pasta
- ¼ cup butter
- 1 Tbsp minced garlic
- 1 zucchini, sliced
- ½ lb asparagus, cut into bite-size pieces
- 1 red bell pepper, chopped
- ¾ cup chicken broth
- 1 cup fresh or frozen green peas
- 1 (15-oz) jar Alfredo sauce
- 2 cups shredded Parmesan cheese
Instructions
- Cook pasta according to package directions.
- Meanwhile, melt butter in a large nonstick skillet over medium heat; add garlic. Cook just until fragrant. Add zucchini, asparagus, bell pepper, and broth; bring to a simmer.
- Cook vegetables 3 to 4 minutes or until crisp-tender. Add peas and Alfredo sauce; simmer 3 minutes. Stir in half of cheese. Toss with pasta in pasta pot.
- Sprinkle with remaining cheese. Season with salt and pepper, if desired.
