Teriyaki Shrimp Bowls

Ingredients
- 2 lb cooked deli large shrimp
- 4 Tbsp olive oil, divided
- 2 (12-oz) pkg stir-fry vegetables (broccoli, carrots, and snow peas)
- 2 red bell peppers, sliced
- 2 Tbsp minced garlic
- 1 (14-oz) bottle teriyaki sauce
Instructions
- Reheat shrimp in 2 Tbsp hot oil in a large skillet over medium-high heat 2 minutes or until browned. Remove from skillet, and keep warm.
- Add 2 Tbsp oil, vegetables, bell peppers, and garlic to skillet. Cover and cook 8 minutes or until tender, stirring occasionally, and adding 1 to 2 Tbsp water as needed to prevent sticking.
- Return shrimp to skillet. Stir in sauce; cook 2 minutes or until thoroughly heated. Serve over rice.
Side Dish Ingredients
- 3 (3.5-oz) pouches boil-in-bag brown rice
- 3 Tbsp toasted sesame seeds
Side Dish Instructions
- Cook rice according to package directions. Toss with sesame seeds in a bowl. Season with salt, if desired.
