Ingredients

  • 2 lb cooked deli large shrimp
  • 4 Tbsp olive oil, divided
  • 2 (12-oz) pkg stir-fry vegetables (broccoli, carrots, and snow peas)
  • 2 red bell peppers, sliced
  • 2 Tbsp minced garlic
  • 1 (14-oz) bottle teriyaki sauce

Instructions

  1. Reheat shrimp in 2 Tbsp hot oil in a large skillet over medium-high heat 2 minutes or until browned. Remove from skillet, and keep warm.
  2. Add 2 Tbsp oil, vegetables, bell peppers, and garlic to skillet. Cover and cook 8 minutes or until tender, stirring occasionally, and adding 1 to 2 Tbsp water as needed to prevent sticking.
  3. Return shrimp to skillet. Stir in sauce; cook 2 minutes or until thoroughly heated. Serve over rice.

Side Dish Ingredients

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 3 Tbsp toasted sesame seeds

Side Dish Instructions

  1. Cook rice according to package directions. Toss with sesame seeds in a bowl. Season with salt, if desired.
