Pork Pad Thai
Ingredients
- 4 oz whole-grain spaghetti
- ¼ lb ground pork
- ½ small head bok choy, cut into ½-inch-thick slices
- 1 cup shredded carrots
- 1 green onion, chopped
- 1 clove garlic, minced
- ¼ cup low-sodium chicken broth
- 1½ Tbsp low-sodium soy sauce
- 1 Tbsp rice vinegar
- 2 tsp Asian garlic chili sauce
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook pork and bok choy in a large skillet over medium heat, stirring until pork is browned and crumbly; drain. Stir in carrots, onion, and garlic; cook 2 minutes.
- Whisk together broth, soy sauce, vinegar, and chili sauce; add to pork mixture, and cook 1 minute. Add pasta; toss.
