Pork Pad Thai

Ingredients

  • 4 oz whole-grain spaghetti
  • ¼ lb ground pork
  • ½ small head bok choy, cut into ½-inch-thick slices
  • 1 cup shredded carrots
  • 1 green onion, chopped
  • 1 clove garlic, minced
  • ¼ cup low-sodium chicken broth
  • 1½ Tbsp low-sodium soy sauce
  • 1 Tbsp rice vinegar
  • 2 tsp Asian garlic chili sauce

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook pork and bok choy in a large skillet over medium heat, stirring until pork is browned and crumbly; drain. Stir in carrots, onion, and garlic; cook 2 minutes.
  3. Whisk together broth, soy sauce, vinegar, and chili sauce; add to pork mixture, and cook 1 minute. Add pasta; toss.
