Tomato, Mozzarella, and Black Olive Chicken

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil, divided
  • 1 pint grape tomatoes, halved
  • 1 (8-oz) pkg fresh mozzarella cheese pearls
  • 1 (6-oz) can sliced black olives
  • ¼ cup chopped fresh parsley (optional)

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper.
  2. Cook chicken, in batches if necessary, in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
  3. Meanwhile, combine tomatoes, cheese, olives, 2 Tbsp oil, and, if desired, parsley. Serve with chicken.

Side Dish Ingredients

  • 1 (10-oz) pkg chopped romaine lettuce
  • ⅓ cup vinaigrette-style Caesar dressing
  • 1 (4-oz) pkg gluten-free seasoned croutons

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
