Tomato, Mozzarella, and Black Olive Chicken
Quick Caesar SaladIngredients
- 6 (6-oz) boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil, divided
- 1 pint grape tomatoes, halved
- 1 (8-oz) pkg fresh mozzarella cheese pearls
- 1 (6-oz) can sliced black olives
- ¼ cup chopped fresh parsley (optional)
Instructions
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper.
- Cook chicken, in batches if necessary, in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
- Meanwhile, combine tomatoes, cheese, olives, 2 Tbsp oil, and, if desired, parsley. Serve with chicken.

- 1 (10-oz) pkg chopped romaine lettuce
- ⅓ cup vinaigrette-style Caesar dressing
- 1 (4-oz) pkg gluten-free seasoned croutons

- Toss together all ingredients in a large bowl.
