Apple-Cinnamon French Toast Roll-Ups

Ingredients

  • 4 Tbsp butter, divided
  • 1 crisp, red apple, peeled and cut into chunks
  • 3 Tbsp packed brown sugar
  • ½ tsp ground cinnamon
  • 6 slices sandwich bread
  • 1 large egg
  • 2 Tbsp milk
  • ½ (8-oz) bottle pancake syrup

Instructions

  1. Melt 2 Tbsp butter in a nonstick skillet over medium heat. Add apple, brown sugar, and cinnamon. Cook, stirring occasionally, until apples are very tender and mixture is thickened. Let cool 20 minutes.
  2. Meanwhile, cut crusts from each bread slice, and roll very thin. Spread about 2 Tbsp apple mixture down center of each bread slice. Roll up to completely enclose filling.
  3. Whisk together egg and milk in a shallow bowl. Dip roll ups in egg mixture to coat, letting excess drip off.
  4. Melt 2 Tbsp butter in a nonstick skillet over medium heat. Add roll ups, and cook 3 minutes per side or until golden brown. Serve hot with syrup.

Side Dish Ingredients

  • ¼ lb ground pork sausage
  • 3 large eggs
  • 1 Tbsp milk
  • ¼ tsp salt
  • ½ (16-oz) container strawberries, halved

Side Dish Instructions

  1. Cook sausage in a nonstick skillet over medium heat 6 to 8 minutes or until browned and crumbled; drain on paper towels, reserving ½ Tbsp drippings in skillet.
  2. Meanwhile, whisk eggs, milk, and salt in a bowl; add to skillet. Cook over medium-low heat 4 to 5 minutes or just until eggs begin to set on bottom.
  3. Gently stir cooked sausage into eggs. Cook until eggs are thickened and set.
  4. Serve strawberries on each plate.
