Apple-Cinnamon French Toast Roll-Ups
Sausage-Egg Scramble and StrawberriesIngredients
- 4 Tbsp butter, divided
 - 1 crisp, red apple, peeled and cut into chunks
 - 3 Tbsp packed brown sugar
 - ½ tsp ground cinnamon
 - 6 slices sandwich bread
 - 1 large egg
 - 2 Tbsp milk
 - ½ (8-oz) bottle pancake syrup
 
Instructions
- Melt 2 Tbsp butter in a nonstick skillet over medium heat. Add apple, brown sugar, and cinnamon. Cook, stirring occasionally, until apples are very tender and mixture is thickened. Let cool 20 minutes.
 - Meanwhile, cut crusts from each bread slice, and roll very thin. Spread about 2 Tbsp apple mixture down center of each bread slice. Roll up to completely enclose filling.
 - Whisk together egg and milk in a shallow bowl. Dip roll ups in egg mixture to coat, letting excess drip off.
 - Melt 2 Tbsp butter in a nonstick skillet over medium heat. Add roll ups, and cook 3 minutes per side or until golden brown. Serve hot with syrup.
 
Side Dish Ingredients
- ¼ lb ground pork sausage
 - 3 large eggs
 - 1 Tbsp milk
 - ¼ tsp salt
 - ½ (16-oz) container strawberries, halved
 
Side Dish Instructions
- Cook sausage in a nonstick skillet over medium heat 6 to 8 minutes or until browned and crumbled; drain on paper towels, reserving ½ Tbsp drippings in skillet.
 - Meanwhile, whisk eggs, milk, and salt in a bowl; add to skillet. Cook over medium-low heat 4 to 5 minutes or just until eggs begin to set on bottom.
 - Gently stir cooked sausage into eggs. Cook until eggs are thickened and set.
 - Serve strawberries on each plate.
