Shrimp, Sausage, and Potato Dinner

Ingredients

  • 2 lb small red potatoes, halved
  • 3 Tbsp olive oil, divided
  • 1 Tbsp salt-free Cajun Creole seasoning, divided
  • 1½ lb unpeeled, large raw shrimp
  • 1 (13-oz) pkg smoked sausage link, cut into ½-inch pieces
  • 1 (12-oz) pkg frozen corn kernels
  • ¾ cup cocktail sauce

Instructions

  1. Preheat oven to 425°F. Toss together potatoes, 2 Tbsp oil, and 2 tsp seasoning on a lightly greased large rimmed baking sheet; spread in a single layer. Bake 20 minutes.
  2. Meanwhile, toss together shrimp, sausage, corn, 1 Tbsp oil, and 1 tsp seasoning on a second lightly greased large rimmed baking sheet; spread in a single layer.
  3. Add to oven with potatoes, and bake 15 minutes or until potatoes are tender and shrimp are pink. Serve with cocktail sauce.
