Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • 3 shallots, chopped
  • 3 cloves garlic, minced
  • ⅓ cup white wine
  • ⅔ cup heavy cream
  • 6 Tbsp Dijon mustard
  • 1 Tbsp chopped fresh thyme

Instructions

  1. Pound chicken to a ½-inch thickness in a zip-top plastic bag using the heel or your hand or a meat mallet. Sprinkle with salt and pepper.
  2. Cook chicken in hot oil in a large skillet over medium-high heat 2 minutes per side or until browned. Add shallots and garlic; cook 2 to 3 minutes or until tender.
  3. Stir in wine, scraping skillet to loosen browned bits. Add cream, mustard, and thyme. Cook 5 to 6 minutes or until sauce is thickened.

  • 2 lb red potatoes
  • ¾ cup buttermilk
  • 1 (5-oz) pkg baby spinach
  • 6 Tbsp butter
  • 3 Tbsp chopped fresh thyme
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large saucepan. Cook 12 to 14 minutes or until tender; drain.
  2. Add buttermilk, spinach, butter, thyme, salt, and pepper. Mash with a potato masher.
