Ingredients

  • ¼ cup butter, softened
  • 2 cloves garlic, minced
  • 1 Tbsp chopped fresh parsley
  • 1 tsp lemon zest
  • 1½ lb bone-in, skin-on chicken thighs

Instructions

  1. Preheat oven to 425°F. Stir together butter, garlic, parsley, and lemon zest in a small bowl; rub mixture under and over chicken skin. Sprinkle with salt and pepper, if desired.
  2. Place chicken, skin side up, on a rimmed baking sheet lined with parchment paper or foil. Bake 25 to 35 minutes or until chicken is browned and done.

  • ½ (20-oz) pkg frozen mashed cauliflower
  • 2½ cups chopped romaine lettuce
  • ¼ cup sliced cucumber
  • 2 Tbsp sliced red onion
  • ¼ cup Greek vinaigrette

Side Dish Instructions

  1. Heat cauliflower according to package directions.
  2. Toss together lettuce, cucumber, onion, and vinaigrette in a bowl.
