Roasted Garlic Butter Chicken Thighs

Ingredients
- ¼ cup butter, softened
- 2 cloves garlic, minced
- 1 Tbsp chopped fresh parsley
- 1 tsp lemon zest
- 1½ lb bone-in, skin-on chicken thighs
Instructions
- Preheat oven to 425°F. Stir together butter, garlic, parsley, and lemon zest in a small bowl; rub mixture under and over chicken skin. Sprinkle with salt and pepper, if desired.
- Place chicken, skin side up, on a rimmed baking sheet lined with parchment paper or foil. Bake 25 to 35 minutes or until chicken is browned and done.

- ½ (20-oz) pkg frozen mashed cauliflower
- 2½ cups chopped romaine lettuce
- ¼ cup sliced cucumber
- 2 Tbsp sliced red onion
- ¼ cup Greek vinaigrette
Side Dish Instructions
- Heat cauliflower according to package directions.
- Toss together lettuce, cucumber, onion, and vinaigrette in a bowl.
