Homestyle Beef and Bean Soup
Ingredients
- ¾ lb ground beef
- ½ cup chopped onion
- 1 Tbsp minced garlic
- ½ (14.5-oz) can diced tomatoes with basil, garlic, and oregano
- 2 cups beef stock
- ¾ cup crinkle cut carrots
- 1 tsp Italian seasoning
- ¾ cup canned drained and rinsed cannellini beans
- 1½ cups baby spinach
- ½ cup freshly grated Parmesan cheese
Instructions
- Cook beef, onion, and garlic in a Dutch oven over medium heat until beef is browned and crumbly. Drain and return to pot.
- Add tomatoes, stock, carrots, and seasoning; bring to a simmer. Cook 10 minutes.
- Add beans and spinach; cook just until thoroughly heated. Sprinkle each serving with cheese.
