Homestyle Beef and Bean Soup

Ingredients

  • ¾ lb ground beef
  • ½ cup chopped onion
  • 1 Tbsp minced garlic
  • ½ (14.5-oz) can diced tomatoes with basil, garlic, and oregano
  • 2 cups beef stock
  • ¾ cup crinkle cut carrots
  • 1 tsp Italian seasoning
  • ¾ cup canned drained and rinsed cannellini beans
  • 1½ cups baby spinach
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Cook beef, onion, and garlic in a Dutch oven over medium heat until beef is browned and crumbly. Drain and return to pot.
  2. Add tomatoes, stock, carrots, and seasoning; bring to a simmer. Cook 10 minutes.
  3. Add beans and spinach; cook just until thoroughly heated. Sprinkle each serving with cheese.
