Teriyaki Chicken Bowls

Ingredients

  • ½ lb boneless, skinless chicken thighs, cubed
  • 2 tsp olive oil
  • 1 (12-oz) pkg stir-fry vegetables (broccoli, carrots, and snow peas)
  • 1 red bell pepper, sliced
  • ⅓ cup teriyaki sauce

Instructions

  1. Cook chicken in hot oil in a large skillet over medium-high heat 6 minutes or until browned.
  2. Add vegetables and bell pepper; cover and cook 8 minutes or until tender, stirring occasionally and adding water as needed to prevent sticking. Stir in sauce; cook 2 minutes or until thoroughly heated. Serve over rice.

  • 1 (3.5-oz) pouch boil-in-bag brown rice
  • 1 Tbsp toasted sesame seeds

  1. Cook rice according to package directions. Stir in sesame seeds.
