Butter Beans
Ingredients
- ½ (2.5-oz) pkg fully cooked bacon
- ½ (12-oz) pkg andouille smoked sausage, sliced
- 2 Tbsp butter
- 1 Tbsp minced garlic
- ½ cup frozen seasoning blend (diced onion, bell peppers, and celery)
- 1½ cups chopped rotisserie chicken
- 1 (8.8-oz) pouch microwavable rice
- 1 cup Tuscany chicken broth (or use any seasoned chicken broth)
- Fresh parsley or chopped green onions (optional)
Instructions
- Reheat bacon in a Dutch oven over medium-high heat 4 minutes or until crisp. Remove from pot, and tear in big pieces.
- Add sausage to drippings, and sauté over medium-high heat 4 to 5 minutes or until well browned. Remove sausage from pot.
- Add butter, garlic, and seasoning blend to pot. Sauté 2 to 3 minutes. Stir in chicken. Season generously with salt and pepper, if desired.
- Meanwhile, cook rice according to package directions.
- Add broth to pot; bring to a simmer over high heat. Stir in rice and sausage. Simmer to desired thickness. Sprinkle with bacon and, if desired, parsley.

- Heat butter beans in a saucepan over medium heat, stirring often.
