Grilled Rosemary Chicken Skewers

Ingredients

  • 2 tsp dried crushed rosemary
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 lemon, halved
  • 2 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 Tbsp avocado oil

Instructions

  1. Preheat grill to medium-high heat. Combine rosemary, garlic powder, onion powder, salt, and pepper.
  2. Squeeze juice from lemon over chicken; sprinkle with rosemary mixture. Thread chicken onto 6 (12-inch) metal skewers.
  3. Grill chicken on a grill rack rubbed with oil, covered, 10 minutes or until done, turning occasionally.

Side Dish Ingredients

  • 3 romaine lettuce hearts, halved lengthwise
  • 1 small red onion, cut into ½-inch rounds
  • 2 Tbsp avocado oil
  • 2 tsp Dijon mustard
  • 6 Tbsp extra virgin olive oil
  • 3 Tbsp red wine vinegar
  • ½ tsp salt
  • ½ tsp pepper
  • 1 pint grape tomatoes, halved
  • ¼ cup pitted kalamata olives, halved

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush cut sides of romaine and onion with avocado oil; sprinkle lightly with salt and pepper, if desired.
  2. Grill, covered, 2 minutes per side. Coarsely chop onion.
  3. Whisk together mustard, olive oil, vinegar, and ½ tsp each salt and pepper. Drizzle over romaine; top with onion, tomatoes, and olives.
