Grilled Rosemary Chicken Skewers

Ingredients
- 2 tsp dried crushed rosemary
- 1 tsp garlic powder
- ½ tsp onion powder
- ¼ tsp salt
- ¼ tsp pepper
- 1 lemon, halved
- 2 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 Tbsp avocado oil
Instructions
- Preheat grill to medium-high heat. Combine rosemary, garlic powder, onion powder, salt, and pepper.
- Squeeze juice from lemon over chicken; sprinkle with rosemary mixture. Thread chicken onto 6 (12-inch) metal skewers.
- Grill chicken on a grill rack rubbed with oil, covered, 10 minutes or until done, turning occasionally.
Side Dish Ingredients
- 3 romaine lettuce hearts, halved lengthwise
- 1 small red onion, cut into ½-inch rounds
- 2 Tbsp avocado oil
- 2 tsp Dijon mustard
- 6 Tbsp extra virgin olive oil
- 3 Tbsp red wine vinegar
- ½ tsp salt
- ½ tsp pepper
- 1 pint grape tomatoes, halved
- ¼ cup pitted kalamata olives, halved
Side Dish Instructions
- Preheat grill to medium-high heat. Brush cut sides of romaine and onion with avocado oil; sprinkle lightly with salt and pepper, if desired.
- Grill, covered, 2 minutes per side. Coarsely chop onion.
- Whisk together mustard, olive oil, vinegar, and ½ tsp each salt and pepper. Drizzle over romaine; top with onion, tomatoes, and olives.
