Herbed Pork Tenderloin

Ingredients

  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp chopped fresh thyme
  • 1 Tbsp chopped fresh mint
  • 2 Tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 lb pork tenderloin, trimmed

Instructions

  1. Preheat oven to 400°F. Combine herbs, oil, salt, and pepper in a small bowl.
  2. Place pork on a baking sheet rubbed with oil. Rub herb mixture all over pork. Let stand 20 minutes.
  3. Roast 20 to 25 minutes or until a meat thermometer reads 145°F. Let stand 3 minutes before slicing.

  • 2 lb broccoli, cut into florets
  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp Greek seasoning

Side Dish Instructions

  1. Steam broccoli in a steamer basket over simmering water 6 minutes or until crisp-tender. Transfer broccoli to a bowl.
  2. Stir together oil, vinegar, and seasoning. Drizzle over broccoli; toss.
