Turkey, Mushroom, and Egg Casserole
Easy Wilted Spinach
Ingredients
- 1 (14-oz) pkg nitrate-free Polish turkey sausage links, sliced
- 2 (8-oz) pkg sliced mushrooms
- 2 Tbsp coconut oil, melted
- 12 large eggs, lightly beaten
- 2 tsp dried parsley
- ½ tsp garlic salt
- ½ tsp pepper
Instructions
- Preheat oven to 400°F. Sauté sausage and mushrooms in hot oil in a large skillet over medium-high heat 5 minutes or until browned, stirring often.
- Remove sausage and mushrooms from skillet.
- Whisk together eggs, parsley, garlic salt, and pepper in a large bowl. Stir in turkey and mushrooms.
- Pour mixture into a 11-x 7-inch baking dish coated with coconut oil cooking spray. Bake 20 to 25 minutes or until center is set.

- 2 cloves garlic, minced
- 2 Tbsp coconut oil
- 1 (10-oz) pkg baby spinach
- 2 Tbsp apple cider vinegar
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Sauté garlic in hot oil in a large nonstick skillet over medium-high heat 1 minute or until fragrant.
- Add spinach, vinegar, salt, and pepper; cook 3 to 5 minutes or until spinach is wilted and liquid almost evaporates.
