Cheesy Bacon-Ranch Pork Chops

Ingredients

  • 3 slices bacon, chopped
  • 3 oz cream cheese
  • ¾ cup shredded Cheddar cheese, divided
  • ½ Tbsp Ranch seasoning mix
  • ¾ lb boneless center cut pork loin chops
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil

Instructions

  1. Preheat broiler. Cook bacon in a skillet over medium-high heat 6 to 8 minutes or until crisp. Combine bacon, cream cheese, ¼ cup Cheddar, and seasoning mix; set aside.
  2. Meanwhile, sprinkle pork with salt and pepper. Cook pork in hot oil in a large cast-iron skillet over medium-high heat 4 to 5 minutes per side or until done.
  3. Spread bacon mixture on pork; sprinkle with ½ cup Cheddar. Broil 2 to 3 minutes or until cheese melts.

  • 1 (5-oz) pkg spinach
  • ¼ cup walnuts
  • ¼ cup olive oil vinaigrette
