Roasted Red Pepper Meat Loaf
Garlicky Spinach and SquashIngredients
- 1 lb ground beef
- ¼ cup chopped roasted red pepper
- 2 Tbsp diced onion
- 1 Tbsp tomato paste
- 1 Tbsp almond flour
- 1 clove garlic, minced
- 1 large egg, lightly beaten
- ½ tsp paprika
- ½ tsp pepper
- ½ tsp salt
Instructions
- Preheat oven to 425°F. Gently mix together all ingredients in a large bowl using your hands. Shape into a freeform loaf on a lightly greased rack in a broiler pan.
- Bake 50 minutes to 1 hour or until center is no longer pink. Cover with foil to prevent over browning, if needed.

- 1 yellow squash, sliced
- 2 small cloves garlic, minced
- 2 Tbsp olive oil
- 1 (5-oz) pkg spinach
- ¼ tsp kosher salt
- ⅛ tsp pepper
Side Dish Instructions
- Sauté squash and garlic in hot oil in a nonstick skillet over medium-high heat 3 to 4 minutes or until tender.
- Gradually add spinach, stirring until wilted. Sprinkle with salt and pepper.
