Roasted Red Pepper Meat Loaf

Ingredients

  • 1 lb ground beef
  • ¼ cup chopped roasted red pepper
  • 2 Tbsp diced onion 
  • 1 Tbsp tomato paste
  • 1 Tbsp almond flour
  • 1 clove garlic, minced
  • 1 large egg, lightly beaten
  • ½ tsp paprika
  • ½ tsp pepper
  • ½ tsp salt

Instructions

  1. Preheat oven to 425°F. Gently mix together all ingredients in a large bowl using your hands. Shape into a freeform loaf on a lightly greased rack in a broiler pan.
  2. Bake 50 minutes to 1 hour or until center is no longer pink. Cover with foil to prevent over browning, if needed.

  • 1 yellow squash, sliced
  • 2 small cloves garlic, minced 
  • 2 Tbsp olive oil
  • 1 (5-oz) pkg spinach
  • ¼ tsp kosher salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Sauté squash and garlic in hot oil in a nonstick skillet over medium-high heat 3 to 4 minutes or until tender.
  2. Gradually add spinach, stirring until wilted. Sprinkle with salt and pepper.
