Parmesan-Chive Omelets
Buttery Toast and Strawberries
Ingredients
- 4 large eggs
- 6 large egg whites
- ½ tsp pepper
- ¼ tsp salt
- ¾ cup freshly grated Parmesan cheese
- 2 (0.5-oz) pkg fresh chives, chopped
Instructions
- Whisk together eggs, egg whites, pepper, and salt in a large bowl.
- Heat a nonstick skillet over medium heat; coat lightly with cooking spray, and add one-fourth of egg mixture, tilting skillet to spread evenly; cook 1 minute or until edges begin to set.
- Lift edges of omelet with a rubber spatula, tilting pan to allow uncooked egg to flow underneath. Cook 1 minute or until center is just set.
- Layer one-fourth of cheese and chives over omelet.
- Loosen omelet with spatula, and fold in half. Carefully slide omelet onto a plate. Repeat procedure with remaining eggs, cheese, and chives.
Side Dish Ingredients
- 4 tsp butter
- 4 (1-oz) slices whole-grain bread, toasted
- ½ (16-oz) pkg strawberries, halved
Side Dish Instructions
- Spread butter over toast. Serve toast and berries alongside omelets.
