Ingredients

  • ½ onion, chopped
  • 2 Tbsp olive oil, divided
  • 1 (15-oz) can low-sodium cannellini beans, drained and rinsed
  • 1 (14.5-oz) can no-salt-added diced tomatoes
  • 3 Tbsp pitted kalamata olives, coarsely chopped
  • 1 Tbsp drained capers
  • 1 tsp Italian seasoning
  • 1 (18-oz) tube polenta, cut into 9 slices
  • 2 Tbsp chopped fresh basil

Instructions

  1. Cook onion in 1 Tbsp hot oil in a saucepan over medium heat 8 minutes or until very tender.
  2. Add beans, tomatoes, olives, capers, and Italian seasoning; bring to a boil. Reduce heat, and simmer 8 to 10 minutes or until slightly thickened. If desired, season with salt and pepper to taste.
  3. Meanwhile, cook polenta in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until browned and crisp. Serve sauce over polenta. Sprinkle with basil.
