Hot Honey-Pancetta White Pizza

Ingredients

  • 1 (1-lb) ball bakery pizza dough
  • 2 Tbsp olive oil
  • 1 cup whole-milk ricotta cheese
  • 3 cups baby arugula
  • 3 oz thin deli-sliced pancetta (or use prosciutto), torn into 1-inch pieces
  • 1 shallot, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1 Tbsp hot honey (or use mild honey)
  • ¼ tsp crushed red pepper

Instructions

  1. Preheat oven to 450°F. Roll out pizza dough into a 16-inch round on a greased baking sheet; prick dough all over with a fork. Brush with oil; bake 8 minutes.
  2. Top partially-baked crust with ricotta, arugula, pancetta, shallot, and mozzarella. Bake 10 to 15 minutes or until golden and cheese is melted.
  3. Drizzle honey over pizza; sprinkle with red pepper. Cut pizza into 6 slices. Serve 2 slices; refrigerate leftovers up to 2 days for another meal.
