Basil-Avocado BLT Sandwiches

Ingredients

  • 4 slices natural, uncured bacon
  • 4 slices whole wheat bakery bread, toasted
  • 2 Tbsp olive-oil mayonnaise
  • ½ avocado, sliced
  • ½ organic tomato, sliced
  • ½ cup baby arugula
  • ¼ cup crumbled goat cheese
  • 4 fresh basil leaves

Instructions

  1. Cook bacon in a skillet over medium heat until crisp; drain.
  2. Spread one side of each bread slice with mayonnaise; top 2 slices with bacon, avocado, tomato, arugula, cheese, and basil. Top with remaining bread slices, mayonnaise side down.

  • 2 Tbsp olive-oil mayonnaise
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp honey
  • ½ lb carrots, shredded
  • ¼ cup raisins
  • 2 Tbsp walnuts

Side Dish Instructions

  1. Whisk together mayonnaise, lemon juice, and honey in a large bowl. Add carrots, raisins, and nuts; toss.
