Crouton-Crusted Chicken Thighs
Vegetable Couscous
Ingredients
- ⅓ cup sour cream
- 1 tsp lemon juice
- 1 tsp Worcestershire sauce
- ⅛ tsp pepper
- ⅛ tsp paprika
- ⅛ tsp sugar
- ½ lb boneless, skinless chicken thighs
- ½ cup crushed garlic croutons
Instructions
- Preheat oven to 375°F. Stir together sour cream, lemon juice, Worcestershire, pepper, paprika, and sugar in a small bowl.
- Add chicken to sour cream mixture, turning to coat. Place coated chicken in a greased 9-inch baking dish. Sprinkle crushed croutons over chicken, pressing gently to adhere.
- Bake 20 to 25 minutes or until chicken is done.
Side Dish Ingredients
- ⅓ cup Israeli (pearl) couscous (or use other couscous)
- ½ (12-oz) pkg frozen mixed vegetables (carrots, green beans, corn, and peas)
- 1 Tbsp olive oil
- ½ tsp Italian seasoning
- ¼ tsp salt
Side Dish Instructions
- Cook couscous and vegetables separately according to package directions.
- Toss together couscous, vegetables, oil, seasoning, and salt.
