Crouton-Crusted Chicken Thighs

Ingredients

  • ⅓ cup sour cream
  • 1 tsp lemon juice
  • 1 tsp Worcestershire sauce
  • ⅛ tsp pepper
  • ⅛ tsp paprika
  • ⅛ tsp sugar
  • ½ lb boneless, skinless chicken thighs
  • ½ cup crushed garlic croutons

Instructions

  1. Preheat oven to 375°F. Stir together sour cream, lemon juice, Worcestershire, pepper, paprika, and sugar in a small bowl.
  2. Add chicken to sour cream mixture, turning to coat. Place coated chicken in a greased 9-inch baking dish. Sprinkle crushed croutons over chicken, pressing gently to adhere.
  3. Bake 20 to 25 minutes or until chicken is done.

Side Dish Ingredients

  • ⅓ cup Israeli (pearl) couscous (or use other couscous)
  • ½ (12-oz) pkg frozen mixed vegetables (carrots, green beans, corn, and peas)
  • 1 Tbsp olive oil
  • ½ tsp Italian seasoning
  • ¼ tsp salt

Side Dish Instructions

  1. Cook couscous and vegetables separately according to package directions.
  2. Toss together couscous, vegetables, oil, seasoning, and salt.
