Strawberry-Balsamic Avocado Toast

Cottage Cheese with Blueberries

Ingredients

  • 1 lemon
  • 2 avocados
  • Pinch of salt
  • 4 (1-oz) slices whole-grain bread, toasted
  • 1 cup sliced strawberries
  • ½ cup crumbled feta cheese
  • 1 Tbsp balsamic glaze
  • 2 Tbsp chopped fresh basil
  • 4 tsp hulled hemp seeds (See Note)

Instructions

  1. Grate zest and squeeze juice from lemon. Mash avocados using a fork to desired consistency in a bowl; stir in lemon zest, lemon juice, and salt.
  2. Spread avocado over toasts; top with berries and cheese, and drizzle with glaze. Sprinkle with basil and hemp seeds.

Side Dish Ingredients

  • 2 cups fat-free cottage cheese 
  • 1 (4.4-oz) pkg blueberries (or use frozen blueberries, thawed)

Side Dish Instructions

  1. Divide cottage cheese and blueberries evenly among 4 bowls.
