Ingredients

  • ½ lb flank steak
  • 2 tsp Worcestershire sauce
  • 1 small organic green bell pepper, thinly sliced
  • ½ onion, sliced
  • 1 (8-oz) pkg sliced mushrooms
  • 2 tsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (4-oz) hoagie roll (preferably whole wheat), toasted
  • 2 slices provolone cheese

Instructions

  1. Preheat oven to 425°F. Place steak on a large rimmed baking sheet lined with foil; drizzle with Worcestershire sauce.
  2. Surround steak with bell pepper, onion, and mushrooms; drizzle oil over steak and vegetables. Sprinkle with salt and pepper.
  3. Bake 15 minutes; increase oven temperature to broil. Broil 5 minutes or until meat and vegetables are browned.
  4. Meanwhile, split hoagie roll lengthwise, and cut into 2 pieces.
  5. Remove steak from sheet pan; let stand 10 minutes before thinly slicing across the grain; divide steak and vegetables between bread pieces.
  6. Top each sandwich with a slice of cheese.

Side Dish Ingredients

  • 1 organic English cucumber, cut into bite-size pieces
  • 1 cup grape tomatoes, halved
  • ¼ cup thinly sliced radishes
  • 2 tsp chopped fresh flat-leaf parsley
  • 2 tsp olive oil
  • 1 tsp fresh lemon juice
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a bowl. Chill until ready to serve.
