Creamy Chicken Orzo
Easy Cucumber-Spring Mix Salad
Ingredients
- 2 cups orzo
- 3 Tbsp butter
- 1½ lb boneless skinless chicken breasts, cut into 1-inch pieces
- 2 carrots, chopped
- 1 cup finely chopped celery
- ¼ cup all-purpose flour
- 1 tsp dried thyme
- 2 cloves garlic, minced
- 1 tsp onion powder
- ½ tsp pepper
- 1½ cups half-and-half
- ¾ cup freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions; drain.
- Meanwhile, melt butter in a large deep skillet over medium heat. Add chicken, carrots, and celery; cook 6 minutes or until chicken is done.
- Stir in flour, thyme, garlic, onion powder, and pepper. Cook over medium heat 2 minutes, stirring constantly.
- Slowly stir in half-and-half; cook until thickened. Stir in cheese until blended. Stir in pasta. Season with salt and pepper, if desired.
Side Dish Ingredients
- 1 (5-oz) pkg spring mix
- 1 English cucumber, cut into half-moons
- 2 Tbsp olive oil
- 2 Tbsp balsamic glaze (or use balsamic vinegar)
- 2 tsp Italian seasoning
- ½ tsp kosher salt
- ½ tsp pepper
Side Dish Instructions
- Toss together all ingredients in a large bowl.
