Creamy Chicken Orzo

Easy Cucumber-Spring Mix Salad

Ingredients

  • 2 cups orzo
  • 3 Tbsp butter
  • 1½ lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 carrots, chopped
  • 1 cup finely chopped celery
  • ¼ cup all-purpose flour
  • 1 tsp dried thyme
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • ½ tsp pepper
  • 1½ cups half-and-half
  • ¾ cup freshly grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, melt butter in a large deep skillet over medium heat. Add chicken, carrots, and celery; cook 6 minutes or until chicken is done.
  3. Stir in flour, thyme, garlic, onion powder, and pepper. Cook over medium heat 2 minutes, stirring constantly.
  4. Slowly stir in half-and-half; cook until thickened. Stir in cheese until blended. Stir in pasta. Season with salt and pepper, if desired.

Side Dish Ingredients

  • 1 (5-oz) pkg spring mix
  • 1 English cucumber,  cut into half-moons
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic glaze (or use balsamic vinegar)
  • 2 tsp Italian seasoning
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1.  Toss together all ingredients in a large bowl.
